All scores measure the associated bacteria presented within the literature to show an effect on the given category. A poor score with gluten intolerance indicates there is a deficiency in the bacteria that are associated with breaking down gluten. Gluten sensitivity or intolerance is an immune/inflammatory response to gluten.  If you don't have any gluten issues, the lack of associated bacteria that help break down gluten may not be an issue for you.  However, if you have symptoms resulting from gluten consumption, it may be due to a lack of associated bacteria that assist in the breakdown.
